I have recently signed up to become a blog ambassador for Zero Waste Week. If you don’t know what it’s about then do check it out.It has really got me thinking about how much waste we produce as a family and how we can reduce that amount. One of the main areas that I have been focusing on is food waste.
We have already cut down our portion sizes and we always use up leftovers so we are doing well there but there is still room for improvement, mainly with the veg scraps and meat carcases.
Homemade Chicken Stock
This week I attempted to make my own chicken stock from leftover roast chicken bones. It was a really simple process and I’m not really sure why I haven’t done it before.
Homemade Chicken Stock Recipe
All you need to do to make your own homemade chicken stock is put your chicken bones into a large pot. Add any veg that you can find, I used 1 carrot, 1 onion and a clove of garlic. (Or alternatively if you want to be really thrifty use vegetable scraps that would normally go into your food wasteΒ bin).
Add a pinch of salt and pepper.
Cover with water and put onto boil. Once boiling reduce heat down to a simmer and leave on the stove. I cooked mine for and hour and a half but the longer you leave it the better it will be.
Once you are happy with it strain it off and fill up your ice cube trays with the remaining liquid and freeze. This way your chicken stock will last longer and you also have perfectly portioned cubes ready for use.
Β My next aim is to make a batch of veg stock from our leftover vegetable scraps.

Brill, I’ve always been put off doing this after an over watery disaster but I will have another try!
To be honest mine could of done with being cooked out for a bit longer to strengthen the flavour and reduce the amount of liquid but I got impatient lol. Let me know how you get on π
I make stock, but I’ve never thought to freeze it in ice cube trays. Mine usually ends up in plastic bags and I have to unfreeze more than I need. Nice idea. I’ve got a few trays to hand.
I was going to freeze it all in bags but I didn’t like the idea of having to chizzle a bit off everytime I needed to use some. Thought this was a good solution π

I make chicken stock whenever I can and I usually pour it into Ziplock 4 cup containers to use for soups and other things. Freezing it in ice cube trays would be for when I need smaller portions.Would love if you come over to Merry Monday Linky Party and share some tips/recipes.
