My Thrifty Thursday for this week involves this bad boy…
It is a hugely overgrown courgette that was given to us (for FREE) by a lovely fellow allotment owner. I have been staring at it for the last two days wondering what on earth I was going to do with it and today I found a solution- an easy courgette soup.
Now please bear with me as I am not the worlds best cook and not really a foodie blogger but I will do the best I can.
Easy Courgette Soup
Courgette, Potato & Mature Cheddar Soup
Prep Time: 15 minutes Cook Time: 15 minutes Serves 8
500g potatoes, unpeeled and chopped
3x veg stock cubes
1 kg courgette, roughly chopped
1 onion finely chopped (I used red but you can use white or spring if you prefer)
100g extra mature cheddar, grated
sprinkle nutmeg (I used dried but fresh is properly better)
What To Do
- Put potatoes in large pan with just enough water to cover them. Add the stock cubes. Bring to the boil and then cover. Cook for 5 mins.
- Add the courgettes, put the lid back on cook for further 5 mins. (You may need to add more water at this point)
- Put onions in, cover and cook for another 5 mins.
4. Take off the heat and stir in the cheese. Season with nutmeg, salt and pepper.
5. Whizz up into a soup.
and Ta Dah…
This recipe is great because not only is it healthy and tastes lovely but the leftovers can also be frozen for another day, so no wastage.
